US K1 visa interview scheduling question

Hi, hoping someone can help with this. I’ve recently completed and submitted my DS-160 form and I am now able to schedule an interview. However, I was planning to travel to the US to see my fiancé for vacation in November, returning to the UK in January. Does anyone know if it would be ok for me to wait until January to schedule my interview?

Also, would taking a vacation after submitting my DS-160 for affect anything, considering you have to fill out your travel history on that form.
