How long can you travel during POST-OPT?

I wanted to travel for more than 30 days during POST-OPT. My school sent me an I-20 and I have a valid passport, f1, EAD, and an offer letter. The school also sent the following :

  • Bring a letter from your employer explaining the nature of the employment activities outside of the U.S. if you will be traveling for more than 30 days. Travels may not exceed 5 months.

What does it mean to "explain the nature of employment activities"? Can you travel longer than 30 days (and less than 2 months) and it not be a problem?
