K1 Petitioner quitting job for health/family reasons

I am the petitioner for my fiancé. We have been in the process for over 2 years now and are nearing the end of the K1 process - my fiancé had a second interview in March and we have been in admin processing now for the second time. We were told they are hoping to give us an answer by mid-May, which is now, so hopefully we'll get some news soon.

Last weekend my elderly father had a stroke and my family and I are trying to figure out how to deal with this. I help and stay with him 4 days a week (after he got COVID and needed more help) and we also got a live-in caregiver. Putting him in a home is out of the question at this point in time.

I have been wanting to leave my toxic job for some time now as it is causing me severe stress, however this latest event with my dad really has me feeling that the only way that I can preserve my mental health and also be there for my dad is to quit/take a leave of absence.

I understand the income requirements for K1 and I am trying to hold out for a definitive answer from the embassy before I make any job decisions. However I was wondering if once the K1 visa is granted, could I take some time off before finding something else? How would that affect the adjustment of status? My thought is, maybe take a few months off and then get another job before AOS that is less stress but still meets the income requirements. FWIW, I have additional assets in investments (~200k), but no property, which is well over the 300% income requirement. All the $ in investments could be made liquid within a year. Lastly, I do not have anyone that could be a co-sponsor.
