F1 OPT STEM Extension

Scenario:

I am currently in my F1 OPT period of 1 year which ends on 13th May 2022. Due to unforeseen circumstances, I was not able to defend my capstone for Master's degree this semester so professor have asked me to defend it in January 2022 but have agreed to have my capstone grade changed from Incomplete to a letter grade in May 2021. This will push my graduation to May 2022 but I will have transcripts saying that my coursework was completed in May 2021. Will that affect my OPT STEM Extension application?

My only concern is this message that we received today in addition to the acceptance: ​ " [Name of petitioner] does not meet the minimum income requirement to sponsor the intending immigrants for this case.
