K-1 Visa Passport Question

Hey, just two quick questions. We have the initial packet almost ready to send. I just want to make sure we have zero chance if getting rejected since we are doing it ourselves. Any help would be appreciated.

With scanning the passport, do they literally need evey page, even though there are no stamps on some pages? My fiance's passport is about 50 pages. This would save a bit of time, money and space to not scan every page.
I don't have W-2s since I have not worked in the US in many years. Is there somethibg I can replace that with?
