K1 Sent to embassy and timeline relating to travel plans

I am a US citizen, and my fiance is a Mexican citizen, We received our NOA1 on Jan 8,2020 and NOA2 April 28th 2020 I received an email on May 11th that our case was forwarded From NVC to the embassy in Mexico city. Our case being sent to this embassy is in line with recent k1 updates from Mexico. This is great news for everyone waiting and ourselves.

Just before this notice, My fiance and I planned to have her visit me and my family on her tourist visa for 2-3 months starting in june while we wait for news. I was looking at Visa Journey's K1 Visa Flowchart and the time line appears quite short (in normal times). I also understand that the Mexican embassies are busy and backed up.

My question is should we wait for her to visit? I think till my fiance receives her packet? Pretty sure this is a yes, because i would like her to get all of her items ready before coming. Is this process going to move fast enough were it wouldn't be the best idea to leave now VS just leaving at the end of the process? There is nothing stopping her from being able to go back home quickly once she is here.

Side Questions:
How do i contact the embassy to see if her case was Received? Call, Email?
When submitting my tax returns as evidence of income for my affidavit of support, can i use the H&R block prepared copies i received as receipt after filling my taxes or do i need IRS transcripts? The copies look like IRS forms.
