RFE issued for OPT application

I previously got OPT approved after obtaining a 2-year associate in pre-nursing. After completing the LPN program, I applied for another OPT but received and RFE asking I demonstrate it is a higher educational level. The associate in pre-nursing is a pre-requisite for acceptance to the LPN program. Any ideas on how I should respond ?
