I’ve left my job but don’t want to put “unemployed” in the DS-260 for my greencard interview.

So I’ve not been working for some time now but I figure putting “unemployed” in the DS-260 would send a bad vibe to the IO. Can I just put my last job as my present occupation/work?

Does immigration really verify the foreign employment of a green card applicant? I’m in Canada.
