Question about getting F-1 Visa (With abnormal circumstances)

My fiancé is wanting to come study in the USA. She currently has a bachelors from her school in Korea, but she is wanting to sort of start from scratch here in order to become a dentist (a major that is quite different from the one she got her bachelors degree in). Her current plan is that she wants to study at a community college for two years to get an associates in science. We are doing this so we can save on money until I graduate and get started on a job (and then we will get married as I will be more financially stable and have income). We want her to go through community college as it is close to my house so she can stay there, and also to avoid the insane cost of out-of-state tuition at state universities. So after we get married and she gets a green card, she will move to a state university and do this for 2 years to get a bachelors in science (from there she will take the DAT exam and then go to a dentistry graduate program). We are wondering what is the best way to discuss things with immigration when she goes for her Visa interview to get her F-1 visa. We don’t want them to try to push her into a K-1 visa as we are not ready to be married yet. In terms of financials, she can fully cover herself for the first year of community college, so my family and I do not have to sponsor her (but we could do that for future years). We are hoping her parents will sponsor her after her first year (as of now they are not the most supportive as they don’t think she can make good enough grades (she is planning on working her hardest to get good grades (I believe she can do it) so she can convince her parents she has the potential to do it and they could help fund her (they do have the financial ability to do so))). We also are worried that since she has a bachelors degree already, that they may be unsure about her going to a community college and starting over. How can we answer the immigration officer’s questions in order to honestly get her F-1 visa? (Keyword being Honestly. We do not want to lie to them, we want to be 100% honest)
