Traveling question: Wife has an expired green card but recently received an 18 month extension from the expiration date. Can she travel to other countries?

Hello I’m new to this sub and not sure if this is the right place to ask but I wanted to know if my wife is safe to travel to other countries with her 18 month extension (specifically to Cancun, Mexico). So her green card is expiring coming March 28 and we filed for her I-751 petition to remove conditions on residence form a few months back. A few weeks ago we received a notice of action letter letting her know that her form has been received and under review. In addition, she also received a letter letting her know that her conditional resident status is extended for 18 months from the expiration date on her form I-551, permanent resident card (also known as green card). It states that “during the extension, you are authorized to work and travel. This notice presented with your expired permanent resident card, is evidence of your status and work authorization.

My wife and I are planning on going to Cancun, Mexico for a week in May and just wanted to be sure she would be okay entering other countries with the documentation she currently has. How I read this is that she will be okay to travel but wanted to see if anyone knows or have experienced any issues traveling on an extended green card. Thank you!!

NVC Case FE Review note

Hi everyone, my family and I are under the F3 category and we just received a notice from NVC that our documents have been approved and that we are Documentarily Qualified. My only concern is this message that we received today in addition to the acceptance: " [Name of petitioner] does not meet the minimum income requirement to sponsor the intending immigrants for this case. The consular officer will make a decision regarding this requirement at the time of the interview. For more information, please visit https://www.uscis.gov/i-864p . To avoid delays, an additional Affidavit of Support Form I-864 for a joint sponsor may be submitted." We already have a petitioner and a household sponsor (the household sponsor's income is above the required level), but still unsure why we received this. Has anyone else received this message? All of our documents say "Approved" on NVC. Does this mean we have to find another sponsor? Can we show the consular officer our
