Does it make sense to switch from K1 to CR1?

My fiancé ( US ) filled for a K1 visa and we got our NOA1 in September 2020. We are currently waiting to receive our NOA2. However, considering the travel ban preventing K1 from getting interviews and the backlog that has created, it looking like next year when we could get married. ( I'm in the UK)

We are exploring the following option right now. We would keep the K1 application open for now but at the same time submit application for a marriage visitor visa in the UK. This visa is required to be sent 3 months ahead of your arrival date. Our plan would be to get married in the UK July 1st and ditch the K1 one for a CR1. We would then jump between the UK and USA 3 months at a time while we wait for our CR1 to be approved.

If for some reason over the next month or two, the K1 processing time really speeds up, we can switch back to the K1 plan.

What we like about this plan is we get married sooner and we get to spend more time together then we would going the K1 route.

Does it make sense to switch to the CR1? Are there any potential legal issues?

Any advice would be much appreciated!

NVC Case FE Review note

Hi everyone, my family and I are under the F3 category and we just received a notice from NVC that our documents have been approved and that we are Documentarily Qualified. My only concern is this message that we received today in addition to the acceptance: " [Name of petitioner] does not meet the minimum income requirement to sponsor the intending immigrants for this case. The consular officer will make a decision regarding this requirement at the time of the interview. For more information, please visit https://www.uscis.gov/i-864p . To avoid delays, an additional Affidavit of Support Form I-864 for a joint sponsor may be submitted." We already have a petitioner and a household sponsor (the household sponsor's income is above the required level), but still unsure why we received this. Has anyone else received this message? All of our documents say "Approved" on NVC. Does this mean we have to find another sponsor? Can we show the consular officer our
